Today I want to share a recipe with you that is pure comfort food for me and brings back lots of good memories of growing up and how friends always have the best recipes.

Now I want you to know, this is not a cooking blog but occasionally I do like to share a recipe with you. And I am by no means a master chef, cook or baker. I am just average and these are just recipes that are easy and favorites of mine.

Growing up my Mom always like to make applesauce cakes and I have always loved apples, so this recipe definitely brings back great memories of holiday meals and Fall. Mom usually made her cakes around Thanksgiving or Christmas.

This recipe was given to me by an old friend and neighbor and is easy enough to make any time of year. I usually like to make with homemade applesauce (which is another recipe she gave me) but when I made this on Monday, I only had store bought, so that works well, too. And if you have chunky applesauce, even better.

I did change my version up a bit by coating the greased loaf pan with a cinnamon sugar mixture and then sprinkling more cinnamon sugar on top of the cake before I bake it. It gives it a crunchy, flavorful crust. This loaf is perfect for dessert or breakfast.

Around the holidays I will double the recipe and add pecans or walnuts and bake in a Bundt pan for a delicious cake. I usually make a glaze out of apple juice and powdered sugar and that gives the cake an extra bit of moistness and a little sweeter flavor.

It really is delicious and so easy. It only took a few minutes to whip up and then bake. Let me share the recipe with you now.
Spiced Applesauce Loaf
- 1/3 Cup Butter
- 1 Cup Brown Sugar (packed)
- 1 Egg
- 1 Cup Fresh Applesauce (works with store bought, too)
- 1 1/2 Cups Cake Flour
- 1 tsp. Baking Soda
- 1 tsp. Baking Powder
- 1 tsp. Cinnamon
- 1/2 tsp. Allspice
- 1/2 tsp. Nutmeg
- Dash of Salt
- Cinnamon-Sugar Mixture
Preheat oven to 375 degrees. Grease a loaf pan well; cover sides and bottom completely with cinnamon-sugar mixture to coat well. Cream butter and sugar. Add egg and beat well. Stir in applesauce. Mix flour and other dry ingredients together; add to liquid mixture until well blended. Turn batter into loaf pan and sprinkle cinnamon-sugar mixture completely over top. Bake for 40-45 minutes or until toothpick or cake tester comes out clean. Cool on wire rack for 15 minutes and then turn out onto wire rack to cool further. Serve warm with vanilla ice cream for an easy dessert.

And it is just as good without ice cream, too! Oh, I always like to use cinnamon applesauce for extra cinnamon flavor! This is a great loaf to make as a housewarming or holiday gift. I have often made them in mini aluminum foil pans to give away at Christmas. It cooks fine in glass, metal or stoneware pans, just keep an eye on your time depending on your pan and your oven. They all cook a little differently.
