Today’s Recipe Card is for Vanilla Pumpkin Pie. The original version of this recipe was given to me by my mother in law Ruth. When I went to make her version, I didn’t have enough corn syrup. In a panic I looked through my cookbook collection and found a substitution chart and used half the amount of corn syrup, because that was all I had, and added 1 cup sugar and 1/4 cup water. I have received many compliments on this version and a lot of comments on how much lighter it is than traditional pecan pies. I am not sure if my happy accident is the cause or if my mother in law’s recipe is the reason but let’s just say our combined talents did the trick! Enjoy!
