Last week we got a new crockpot. And oh my goodness, this is the Cadillac of crockpots, at least in our book. It is digital with multiple cook settings, a meat probe, timer….the list goes on.
Naturally we decided to try it out. Multiple times. And because it is so advanced, we are kind of having to learn how to use since it definitely cooks differently than our old crock pot, which just had high, low and warm.
We made several meals with it last week and I can tell you it is so nice to come home to dinner that is ready without having to fuss a lot over it. Keith wanted chicken noodle soup one day last week so I took a few pictures for posterity.
Keith likes things simple, not a lot of veggies (he will eat carrots) so that morning I dumped everything in but the noodles and let it go. When Keith came home he just added the noodles and it was ready when we were ready to eat. Yum!
Now this is not a fancy recipe or a formal recipe, just the basics and you could definitely play it up or down, depending in what you like. I start with 2 cans of chicken stock (plus 2 cans of water) and add a can of cream of chicken soup (plus a can of water from that can to get all the soup). Then I take two organic boneless, skinless chicken breast and cube, adding to the liquids along with a bag of mini organic carrots. Now, for seasoning, I don’t measure, I just add to taste from experience. I use: onion powder, parsley, thyme and celery seed. If you use real celery, omit the celery seed.
Then I just let it cook on low for 6 hours or until the vegetables are soft and tender. The chicken usually will be done before that, but we like how tender it gets (fall apart) while the vegetables cook.
And, the thing with this new crock pot is that you program the setting (high or low) and then the time and after it reaches that time it automatically goes to warm mode so your food does not over cook. I love this feature.
So when Keith came home, he just put in about 3 cups of no yolks egg noodles and turned it back up to low until we were ready to eat. It was delicious!
