Back at Christmas I did some baking and happened upon a new, easy cookie recipe using a cake mix as the base. I made chocolate chip cookies and they turned out to be tasty and quick to make. That got me thinking about Keith’s birthday and something I could make for him.
He usually has me make a cherry chip cake for him. That is his favorite and one he has had on his birthday since he was little. The only bad thing is a whole cake is too much for just the two of us. I have tried making cupcakes or a sheet cake and that is still too much. But when it comes to cookies, that’s a different story. We can usually polish those off in no time. So, it struck me that I could make cookies using the cake mix he is so fond of.
The recipe is very simple. Cake mix, two eggs and a half cup of butter, melted. Then you add flavorings and any extras that you want. I didn’t think chocolate chips would be the right choice for these cookies. The flavor needed to be a little milder, so I added white chocolate chips. Yum!
The recipe is super easy. Preheat oven to 350 degrees. Melt a stick of butter; let cool so that it is not super hot. Add eggs (at room temperature) and beat well. Then add cake mix and stir until blended. My dough always looks kind of oily, not dry like normal recipes. Then add your extras and mix together. Drop by teaspoonfuls onto a baking sheet and bake 10-12 minutes. Let cool and store in airtight container.
And, as you can see, these turned out beautifully. I just wish you could taste how delicious they are. To think, cookies are now as easy as can be and the combinations are limitless. Can’t wait it figure out what the next cookie will be….
